    One of the main ingredients of Mexican food is corn. This is no surprise, as it is thought that corn originated in Mexico. When the Spanish conquistadors colonized Mexico, they found that indigenous Mexicans ate mainly corn-based dishes with a variety of spices and chili peppers. Beans, tomatoes, and cactus were also some of the most important components of Mexican food. A variety of fruits and rarer ingredients (such as huitlacoche, agave, and achiote) were also present during that historical period. It is also important to mention that two staples of world cuisine, vanilla and chocolate, originated in Mexico and were widely used by indigenous Mexicans at the time of the Spanish conquest. Modern Mexican food is a result of indigenous Mexican cuisine with the ingredients and techniques introduced by the Spaniards (such as the introduction of wheat, olive oil, and various other ingredients that were unknown in the New World.)

    Corn and beans are, without a question, the most important components of Mexican food. Masa, a corn-based dough, is the base for some of the most popular Mexican dishes, such as tamales, tortillas, and tortilla-based dishes. Mexican food is extremely varied, considered one of the most varied cuisines in the world (along with Chinese and Indian food.) Mexican food typically uses chili peppers and a variety of spices that are unique to the region (such as epazote or chipotle.) Mexican food is also unique in that it uses ingredients such as chocolate or cinnamon in unconventional ways.


    Mexican food varies greatly depending on the region. Takis Chips are extremely popular in the United States. Many so-called staples of Mexican food can be very general and change wildly depending on the region. For example, tacos are known worldwide. This simple dish, made out of a tortilla with some kind of filling, can use countless toppings, sauces, and fillings. Near the coasts, fish or shrimp tacos are extremely popular, while in the cattle-farming north, tacos are almost exclusively beef-based.
